Mom's Amazing Chocolate Brownies


Adapted from Betty Crocker Cookie book from 'The Best Cooky of 1920-1930'
"Men love them - so do women and children" - 1963

Cocoa Brownies (Mom's non-dairy version)
1/2 cup corn oil
1 cup sugar
2 eggs
1 tsp. vanilla
2/3 cup flour
1/2 cup cocoa
1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup chopped walnuts (opt)

Heat oven to 350*. Mix oil, sugar, eggs and vanilla until well blended. Blend dry ingredients, mix in. Stir in nuts. Spread in well-greased pan, 8x8x2". Bake about 30 minutes. Cool, cut in 2" squares.

Fabulous with some fresh berries and ice cream - So Delicious Coconut Ice Cream for us non-dairy folks!

  2. Wow, those sound YUMMY! And the photo, it is beautiful...I can almost taste the brownie and berries. I think will have to try that recipe...hmmm,says men love them - maybe I will snag me a man...lol :) :o :p

  8. I grew up on The Betty Crocker Cookie Book. A few years back they reissued it, exactly like the original one, and my sister got a copy for each of us. The Cream Wafers in there is one of my favorite recipes, and also the Thumbprint Cookies. Although, brownies are my weakness!
